Chocolate Chocolate-Chip Cheesecake

Oreo Cookie Crust(see recipe below)

2 pounds cream cheese, at room temperature
1 1/2 cups granulated sugar
1/3 cup unsweetened cocoa powder
6 eggs
1 1/2 cup chocolate chips

Ganache(see recipe below)
Make the cookie crust and allow to cool. Preheat the oven to 300 degrees F.
Cream the cream cheese, sugar and cocoa together. Beat in the eggs one at a time. Fold in the chocolate chips.

Pour over the Oreo cookie crust. Bake for 1 1/2 to 2 hours, until the outer edge of the cake is set. Chill for at least 4 hours, then remove from the pan and glaze with the ganache.

Chill for 1/2 hour, then cut into 12 slices and serve.

Oreo Cookie Crust
2 cups Oreo cookie crumbs(centers removed and chocolate cookies crushed)
1/2 cup granulated sugar
8 tablespoons(1 stick) butter, melted
Mix the crumbs, sugar and butter. Grease a 10-inch springform pan. Press the crumbs firmly into the bottom of the pan. Bake at 350 degrees F for 10 minutes or until the crust is firm.

Ganache
1 cup heavy cream
2 cups chocolate chips, plus additional for decorating

Bring the cream to a boil. Pour cream over 2 cups of chocolate chips and stir until smooth.
Place the chilled cheesecake on a cooling rack. Place cooling rack on a cookie sheet. Pour warm ganache over the cheesecake to glaze.

Decorate by pressing chocolate chips on the edges of the cake.
