"Most chefs are pretty rigid. They want you to use exactly what they use, with certain amounts of each ingredient and all ingredients included. Maybe it's the Hawaiian way I was brought up, but that never seemed right to me. Everyone has different tastes and should feel free to mix things the way they like. That's how we do food in Hawai`i."
