Operating also as a high-tech, small-scale microbrewery, David’s shop was renowned among the home brewers’ circles as producing some of the finest beer in Hawaii. Sam Choy and his partner, James H.Q. Lee was searching for a master brewer for their new concept of a restaurant/microbrewery on Nimitz Hwy. At about the same time, David Campbell hoped to further introduce micro-brewed beers to a wider audience. What could be more perfect than to work with an internationally acclaimed chef to develop and brew a variety of beers that would complement the chef’s culinary creations?

Today the micro-brewed beers of Sam Choy’s Big Aloha Brewery attract a large crowd of both appreciative regulars and curious customers to the monthly brewer’s dinners held at the restaurant on Nimitz Hwy. Selected Big Aloha Beers are available on tap at Sam Choy’s Diamond Head Restaurant. “David Campbell is a man after my own heart with his rigorous standards of excellence,” says Sam Choy, “He brews each beer with top quality local ingredients and meticulous timing and temperature. The beers undergo a delicate brewing process and are aged to perfection.”

Sam Choy likes to boast that each Big Aloha brew has a distinct, fresh flavor that can stand up to some of the best microbrews in the country. With his beer sales becoming a most profitable part of his restaurant business and invitations to brewer’s festivals pouring in for his brewmaster, Sam Choy may just be on target again. “Well,” muses Sam Choy, “my mark of our success is simply that even those customers who just came in for my food and don’t normally drink beer are becoming fans of Big Aloha.”
